Main dish - chicken

Tbsp = tablespoon
lb = pound

Makes 4 servings

Recipe Ingredients

Boneless, skinless, chicken breast halves - 1 1/4 lb
Tomato, coarsely chopped - 1 medium
Garlic powder/salt, herbs, spices - 1 Tbsp
Water - 1/3 cup
Olive oil - 1 Tbsp
Shredded mozzarella cheese - 1 cup
Grated Parmesan cheese - 1 Tbsp

Recipe Instructions

Preheat oven to 400 degrees F. In a 13 X 9 - inch baking dish, arrange chicken; top with tomato.

Pour Garlic powder/salt, herbs, spices with water and oil over chicken.

Bake uncovered 20 minutes. Top with cheese and bake 5 minutes or until cheese is melted and chicken is thoroughly cooked. Serve, if desired, with crusty Italian bread.

Prep time: 5 minutes
Cook time: 25 minutes
