Description: Light and fresh. With plump blueberries, juicy strawberries and raspberries, sweet apricots, and tangy pineapple and kiwi all sitting pretty on a cream-covered flan |
Recipe Ingredients

- Crust
- 2/3 cup unblanched almonds, toasted 150 mL

- 6 tbsp butter, softened 90 mL

- 1/4 cup sugar 50 mL

- 1 egg 1
-
- 1 cup All Purpose Flour 250 mL

- Filling
- 1/4 cup strawberry or apricot jam 50 mL
- 1 block Light Cream Cheese, room temperature

- 1/2 cup icing sugar, sifted 125 mL

- 1 tsp vanilla 5 mL

- 1/2 cup whipping cream 125 mL
-
- 3 cups fruit (strawberries, raspberries, blueberries, grapes, kiwi, apricots, pineapple) 750 mL - your choice
- Glaze (optional)
- 1/2 cup apricot jam or red currant jelly, sieved 125 mL

- 1 tbsp lemon juice 15 mL

Recipe Instructions

Crust
Process almonds in food processor until finely ground.
Cream butter, sugar and egg until blended.
Mix in flour and almonds thoroughly.
Press dough evenly into sides and bottom of 9" (23 cm) tart pan with removable bottom to form a shell.
Bake at 350°C (180°C) for 20-25 minutes, or until golden.
Cool.
Filling
Spread jam evenly over crust.
Beat cream cheese, icing sugar and vanilla together until smooth.
Whip cream to stiff peaks. Fold into cheese mixture. Spread evenly over jam.
Arrange fruit attractively over cheese mixture. Serve immediately or glaze.
Glaze
Melt jam and lemon juice together until smooth.
Brush over fruit.
Chill until serving but serve at room temperature for maximum flavour.
