Description: U.S. State of Hawaii traditional food - A feast where the King ate with women was the symbolic act which ended the Hawaiian religious tabus, and the luau was born. The favorite dish at these feasts is what gave the luau its name. Young and tender leaves of the taro plant were combined with chicken, baked in coconut milk and called luau.

Recipe Ingredients

- 1 lb boneless, skinless chicken, cut into bite-size pieces
- 3 cloves garlic, minced
- 1 medium onion, diced
- 4 cups cooked luau (taro) leaves* (Fresh Spinach can substitute)
- 8 oz chicken broth
- 8 oz coconut milk
- Salt and pepper to taste

Recipe Instructions

In a medium saucepan, sauté chicken, garlic, and onion for 5 minutes.
Add taro leaves and chicken broth and coconut milk.
Cover, bring to a boil, lower heat to medium; simmer for 20 minutes or until chicken is tender.
Add salt and pepper to taste. Makes 4 servings.
*Frozen luau leaves (thawed) maybe used, or cook 1 lb cleaned luau leaves in 6 to 8 cups water. Cover, bring to a boil, lower heat and simmer for 30 minutes. Drain liquid and add 6 to 8 cups more water. Cover and simmer for 30 minutes longer or until leaves are tender. Drain
