Description: U.S. State of Montana traditional food - Once they roamed the Great Plains in vast herds. By the middle of the century they were an endangered species. Today the American Buffalo/Bison is back. It is high in protein and lower in fat and cholesterol than chicken and turkey. A delicious taste of the old west combined with the nutritional benefits and flavor of bison/buffalo. |
Recipe Ingredients

- 1 ½ pounds ground bison/buffalo
- salt and freshly ground pepper
- 8 ounces blue cheese, crumbled
- 1 large red onion, sliced crosswise into 4 thick rings
- 1 teaspoon vegetable oil
- 4 burger buns, split and toasted
- arugula leaves or lettuce

Recipe Instructions

Preheat a grill.
In a mixing bowl, season the meat with salt and pepper.
Shape the meat into four ½-inch thick patties.
Place on the grill over medium-hot coals.
Brush the onions with the oil, and add to the grill.
Flip the burgers, and cook to the desired doneness.
Do not overcook.
Remove the burgers from the heat to a platter, and flip the onions.
Season the burgers with more salt and pepper, place them on toasted buns, and top with a few slices of grilled onion, some blue cheese and arugula leaves or lettuce.
