Description: Country Ireland - Corned beef is brisket, topside or silverside which has been pickled in brine. It is especially popular around Dublin. It is best to soak a joint overnight to remove excess salt. |
Recipe Ingredients

- 3 pound corned beef brisket
- 1 teaspoon peppercorns
- 5 cloves
- 1 bay leaf
- 3 onions, quartered
- 6 carrots, halved
- 6 potatoes, quartered
- 1 head cabbage, in 6 wedges

Recipe Instructions
|
Place brisket in large pot and cover with water.
Add spices (if using spice packet included with brisket, dont add additional spices).
Cover.
Simmer on very low heat for three hours, until tender.
Add onions, carrots and potatoes.
Simmer another 15 minutes.
Add cabbage and cook until tender, 10 to 15 minutes more.
Remove meat and drain, serve with vegetables, juice from meat and Irish Soda Bread. |
