Recipe Ingredients

- 2 lb Chicken
- 1 Medium Onion finely chopped
- 1 cup Shredded Cabbage
- 1 cup chopped Celery
- 2 Garlic Cloves, crushed
- 1 Carrot sliced in thin strips (opt)
- 1 can straw mushrooms (opt)
- 1 pkg Pancit Canton Noodles *
- 2 Tbs Soy Sauce (or to taste)
- Patis, to taste (opt)
- Vegetale Oil 2 Tbs is usually plenty
- Pepper
- Lemon Slices (opt)

Recipe Instructions

Begin by slow boiling the chicken with half of the chopped celery and some salt and pepper until tender and thoroughly cooked. Allow chicken to cool and cut in small bites. Discard bones but be sure to save the broth.
Heat the oil and add the crushed garlic and onions. Saute until the onions are transparent. Add the chicken and about 2 Tbs Soy Sauce and stir. Cook on high for about 5 -10 minutes. Add shredded cabbage, mushrooms and carrot slices and stir. Add about 1 cup broth and continue stirring. Cover and cook until cabbage has softened but still slightly crisp, about 5 minutes. Add Pancit Canton Noodles* and about 1/2 cup broth. Stir and allow noodles to soften. If the mixture is too dry add more broth.
Serve with Patis* and Lemon slices
*Pancit Canton Noodles can be found at Asian Markets and sometimes in the Asian food section of your grocery store. If you can't find it you can use vermacelli or angel hair pasta, or egg noodles, though they may be soft. You can also use spaghetti noodles that are cooked and drained but they are not as good.
*Patis is fish sauce that has a unique salty flavor somewhat similiar to soy sauce. It can usually be found in the Asian food section of the grocery store. |
