Recipe Ingredients
1 pound lean ground beef 1 1/2 cup chopped onion 1/2 cup chopped green pepper 1 clove garlic, crushed and minced 1 can (8 ounces) tomato sauce 1 tablespoon chili powder 1 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon hot pepper sauce 12 corn tortillas 1/2 cup cooking oil chopped lettuce chopped tomatoes sliced jalapenos sliced black olives shredded cheese, Cheddar or Monterey Jack sour cream / guacamole taco sauce |
Directions
Brown ground beef. Drain off excess fat. Add 1 cup onion, green pepper, and garlic cook until onion is tender. Stir in tomato sauce, chili powder, salt, pepper, and hot sauce. Cook, uncovered, stirring occasionally, until thickened. While the taco meat is cooking in a separate frying pan heat oil to a little above medium heat. Dip and hold the tortilla half way into the oil, when the tortilla softens, let the other half fall folding the tortilla in half. Let fry for 1 minute or until golden and then flip over to fry the other side. When crisp and golden remove carefully from pan allow oil to drip from tortilla; stand up on papertowels to cool. Spoon meat mixture into taco shells and top with some tomato, lettuce, onion and cheese. Sprinkle each with a little taco sauce. Serve with Guacomole and Sour Cream. Taco meat substitutions: Lean ground beef can also be cooked and let to simmer with just 1 cup salsa or taco seasoning. Replace ground beef recipe ingredient with shredded cooked chicken, turkey, roast beef, steak, or pork. |
