Recipe Ingredients
Prep Time: About 40 minutes Makes: 4 Servings Ingredients: 2 cups small shell pasta 2 tbsp olive oil 1/2 cup green onion, chopped 1 red pepper, chopped 2 cloves garlic, minced 1 cup frozen peas 2 cups fresh spinach leaves, torn 1 can (6 oz) flaked white tuna, drained 1 tbsp lemon juice 1/4 cup Parmesan cheese |
Directions
Preparation: 1. Cook pasta according to package directions. Drain, then rinse with cold water and drain again. Meanwhile, in medium saucepan, heat oil. Add onion, red pepper and garlic; cook until onion is soft. Add peas and spinach; cook until peas are soft and spinach has wilted. Add cooked pasta, tuna and lemon juice; toss with vegetables, gently stirring until pasta is warm. Add Parmesan cheese and toss to coat. 2. Serve immediately with additional cheese, if desired. |
