Recipe Ingredients
Prep Time: Approximately 1 hr. Makes: 2 Servings Ingredients: 1 large onion, to make 1 cup, diced 1 medium potato 1 teablespoon canola oil 2 carrots 2 cups diced celery 8 ounces broccoli 3/4 cup frozen peas 1/2 teaspoon black pepper 1 teaspoon salt 1/4 cup fresh parsley 1/2 teaspoon curry powder 2 teaspoons fine herbes (mixed herbs) 2 cups vegetable broth 1cup tomato juice or V-8 |
Directions
Preparation: Dice onion, potato and other vegetables of your choice. Heat oil in a large skillet over low heat. Add the vegetables and simmer about 15 minutes, unitl onion is soft and golden. Add seasonings and stock of your choice and bring to a boil, simmering another 15 minutes. Remove from heat. When cool, blend in a blender; if too thick, add more stock or juice. This soup keeps well in the fridge. As days go by, add more liquid to thin if needed. |
