Description: Grilled Chicken Salad |
Recipe Ingredients
|
- Ingredients for chicken and salad:
- 4 chicken breasts
- Lettuce for four salads
- 1 apple
- 1 cup toasted pecan halves
- 1 cup vinaigrette
- Ingredients for marinade:
- 1 cup apple cider
- 2 cloves garlic, chopped
- 1/4 cup sugar
- 1/4 cup lemon juice
- 1 tablespoon salt
- Ingredients for Citrus Cream:
- 3/4 cup sour cream
- 1 cup apple cider
- Juice of one lemon
- 1/2 cup orange juice

Recipe Instructions

Procedure for marinade: In blender blen all ingredients thoroughly then bring to a boil in a saucepan. After mixture has come to a boil remove from heat and chill. When chilled pour over chicken breasts and marinate for four hours.
Procedure for Citrus Cream: In saucepan reduce cider and fruit juices until 2 tablespoons of liquid remain. Fold the reduced juic into the sour cream. (if too thick, thin with small amount of apple cider)
Procedure for Salad: Toss lettuce in enough vinaigrette to coat then arrange on plates. Grill chicken until just done then slice into strips. Core apple and slice into 1/8 inch slices. Arrange alternating chicken and apple slices on top of salads in wheel spoke design. Sprinkle with pecan halves and drizzle with Citrus Apple cream.
Yield: 4 servings
