Recipe Ingredients

- Makes: 2 Servings
- Ingredients:
- 1 large onion,
- to make 1 cup, diced
- 1 medium potato
- 1 teablespoon canola oil
- 2 carrots
- 2 cups diced celery
- 8 ounces broccoli
- 3/4 cup frozen peas
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/4 cup fresh parsley
- 1/2 teaspoon curry powder
- 2 teaspoons fine herbes
- (mixed herbs)
- 2 cups vegetable broth
- 1cup tomato juice or V-8

Recipe Instructions

Preparation:
Dice onion, potato and other vegetables of your choice.
Heat oil in a large skillet over low heat.
Add the vegetables and simmer about 15 minutes, unitl onion is soft and golden.
Add seasonings and stock of your choice and bring to a boil, simmering another 15 minutes.
Remove from heat.
When cool, blend in a blender; if too thick, add more stock or juice.
This soup keeps well in the fridge.
As days go by, add more liquid to thin if needed.
