- Ingredients:
- 4 bell peppers
- 2 large onions
- 4 tomatoes
- 1 1/2 pounds eggplant
- 1 pound zucchini
- 4 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fines herbes
- (Mixed herbs)

Preparation:
Trim stems from peppers, remove seeds and membrane, and cut into julienne strips.
Peel and chop onions, tomatoes, eggplant, and zucchini.
Heat oil over medium-high heat in a casserole.
Add onions and cook them gently until they are very soft, stiring often so they do not brown.
Add chopped tomatoes, eggplant, and zucchini to onions, season to taste with salt and pepper, and cook over low heat for 30 minutes, stirring occasionally.
When veggies are tender, let cool slightly and sprinkle with fines herbes.
Serve warm or at room tempature.
