Description: Country Germany - Famous German hot potato salad with sweet vinaigrette sauce, onion and bacon bits is a great side dish. Very easy to cook and very delicious. |
Recipe Ingredients

- 3 Medium size potatoes, peeled and cut cubes (Yukon potatoes preferred)
- 4 Cups water
- Sauce:

- ¼ Cup water
- 1 Tablespoon white vinegar
- 1 Tablespoon sugar
- ½ Teaspoon salt
- 1 Tablespoon cornstarch or All purpose flour
- ¼ Teaspoon black pepper
- 2 Tablespoons vegetable or olive oil
- ½ Cup chopped yellow onion
- ½ Teaspoon dried parsley
- 1 Tablespoon bacon bits

Recipe Instructions

Put potato and water in a pot and boiled potato till fork tender.
Do not over cooked potato.
Drain.
Sauce:
In a small bowl, mix water with vinegar, sugar, salt, cornstarch and black pepper.
Set a side.
Pre-heat a skillet or wok, when it hot pour oil and sauté onion.
Add parsley and vinaigrette sauce. Stirs well till sauce thicken.
Add boiled potato and stirs well.
Sprinkles with bacon bits before serve. |
